We love this easy-to-make and highly addictive granola. The Lemon Candied Pepitas add a citrusy, sweet, and fruity kick to this granola. Serve with milk, yogurt, on top of oatmeal, or just as a snack. Trust us: this is not your grandma’s granola.

Method

  1. Preheat oven to 300°F.

  2. Hydrate chia seeds by mixing the seeds together with water. Let sit at room temperature for half an hour, or the seeds have absorbed the water.

  3. Combine tahini, coconut oil, and honey. Heat over very low heat, stirring until coconut oil is melted and the ingredients are well combined. Remove from heat. Stir in vanilla and hydrated chia seeds.

  4. In a large bowl, mix together the oats, Lemon Candied Pepitas, flax, sesame seeds, and salt. Fold in tahini mixture. Transfer granola to a cookie sheet and bake for 35 minutes at 300°F. Cool the granola before mixing in apricots. Store in an airtight container.
